Fusilli Pasta Salad with Tomatoes and Avocado Recipe

Ingredients

• 2 tbsp red wine vinegar
• 2 ripe avocados, diced
• 1/4 cup extra-virgin olive oil
• 1 pint cherry tomatoes, halved
• 1 minced garlic clove
• 1/4 cup chopped fresh basil
• Season with salt and pepper to taste
• 1/4 cup chopped fresh parsley
• 1 pound fusilli pasta

Time Needed

• Prep Time: 15 minutes
• Cook Time: 10 minutes
• Total Time: 25 minutes

Instructions

• Fusilli pasta should be cooked according to package directions.
• Drain and rinse with cool water.
• Combine the cooked pasta, cherry tomatoes, diced avocado, basil, and parsley in a large mixing bowl.
