Instructions

  • Cook spaghetti until al dente in a pot of boiling salted water according to package directions.
  • Before draining the pasta, save 1/2 cup of the water.
  • While the pasta cooks, heat the olive oil in a large skillet over medium heat.
  • Cook for 3-4 minutes, or until the onion is softened.
  • Cook for 5-6 minutes, until the mushrooms have released their liquid and are golden brown, with the minced garlic and sliced mushrooms.
  • Stir in the heavy cream and Parmesan cheese until the cheese has melted and the sauce is smooth.
  • Season to taste with salt and pepper.
  • To the pan with the mushroom cream sauce, add the cooked spaghetti and the reserved pasta water.
  • Toss everything together until the pasta is completely covered in sauce.
  • Serve immediately, topped with additional grated Parmesan cheese and freshly ground black pepper.
